Potatoes are very susceptible to soft rot disease caused by Pectobacterium carotovorum. Potatoes infected with soft rot disease have soft, oozy, watery, discolored, and odorous tissue. Therefore, P. carotovorum causing soft rot disease in potatoes should be controlled in their postharvest stage. In this study, antimicrobial edible coating suspension was prepared using bacterial cellulose as polymer material and ε-Poly-L-lysine as an antimicrobial agent against P. carotovorum.
