Functional Dendropanax morbiferus vinegar (DMV) was developed by Bacillus subtilis HA and Acetobacter aceti. The 1<SUB>st</SUB> alkaline fermentation of DMV was composed of sterilized 30% Dendropanax morbiferus, 2% glucose, 10% MSG and 5% B. subtilis starter cultured 5% skim milk broth, and then incubated at 42°C for 2 days in a shaking condition with 160 rpm. The 2<SUB>nd</SUB> acetic acid fermentation using A. aceti consists of the 1<SUB>st</SUB> fermented DMV (25%, 50%), glucose (0%, 2%), 7% prethanol A, 5% apple vinegar (2x).
