This study aimed to investigate microbial and physicochemical changes in commercial cold brew coffee to ensure product safety and validate prolonged storage. Microbiological evaluation by total plate count (TPC) and yeast and mold count of raw materials used in cold brew coffee manufacture revealed that microorganisms were originally present in the raw coffee beans but were absent after the coffee beans were roasted and ground, as well as in the water used during coffee manufacture.
