Cabbage (Brassica oleracea L. var. capitata) is one of the vegetables grown worldwide. Cabbage has been reported to contain sulforaphane, which has anticancer properties, and antioxidant phytochemical. In this study, the effect of drying method on the antioxidant, anti-proliferation activity and phenolic compound content of cabbage was evaluated. Cabbage was divided into 6 parts including the outer leaf and core, and dried using hot air drying and freeze drying methods.
